Naan is a leavened flatbread — unlike roti or chapati, the dough contains a raising agent and usually yogurt or milk, which is what gives it its soft, slightly chewy texture and puffed blisters. The dough is rested, stretched by hand into a teardrop and slapped onto the wall of a very hot tandoor, where it cooks in a minute or two. For garlic naan, chopped garlic is pressed into the surface before baking and the finished bread is brushed with butter or ghee and scattered with fresh coriander.
It comes out hot, pliable and freckled with char, with the garlic toasted into the crust rather than sitting raw on top.
